Sev puri is a nice and light vegan snack that you get in Mumbai on the street from carts after 6 pm. Lots of locals have it after work as a snack before their late dinners. Here’s a typical recipe!
Sev puri is a typical Mumbai street food. It’actually very simple to make. The only thing thats a bit of effort (but also not too much) is making the chutneys. Luckily you can make it in bulk and freeze it. The chutneys are also used in many other simple street foods. So if you are into such kind of food, it is absolutely worth it. I ♥ chaat 🙂.

Sev Puri also make a great starter for an Indian meal or a great party snack. Starter by Western standards. If you go to a restaurant in India and ask for starters you’ll most likely be offered grilled or fried meat or paneer. Indian starters are a world of their own and I’ll cover those some other time in one of my focus topics. For now let’s get back to vegan chaat 😉.
Sev Puri – an awesome vegan snack from Mumbai
Ingredients
- 12 puris
- 1 potato boiled in skin
- 1 onion
- 1 tomato optional
- chaat masala
- 6 tsp green chutney
- 6 tsp sweet chutney
- 1 handful sev
- few coriander leaves optional
- pomegranate seeds or raw mango optional
Instructions
- Boil a potato in it's skin, peel and mash it coarsly with a fork.
- Chop one onion finely into bits.
- Chop a tomato into small bits. Some chaat vendors will make their sev puri with tomato, some without. However you like.
- Now place the desired number of puris on a plate. Typical is 6. If you want to use sev puri as a starter before a meal, I suggest to use 3.
- Put a heaped teaspoon of the mashed potato on each puri.
- Now place some onion, maybe half a teaspoon, on top of the potato. Push it in lightly so that it sticks.
- On top of that put a little bit of tomato, maybe 3-4 small bits.
- Now put a pinch of chaat masala on top. Depending on the masala that you bought (or made) you may want to add a bit of salt.
- Then you take half a teaspoon of each chutney on top. No need to mix any of that.Don't use too much chutney, you don't want to drown your sev puri.
- On top of that, sprinkle a generous amount of sev.
- If you like to, garnish with a few chopped coriander leaves and eat with your hands 🙂.
- If you get your hands on some raw, unripe mangos, you can chop it finely and also garnish it with that. By unripe, I mean really unripe. Weeks before they're ripe.Use very little. Or you place some pomegranate seeds on top. That also gives it a nice look. Both is absolutely optional.
