The classic from my hometown: Bethmännchen. I bake these marzipan cookies every year again. They simply belong to Frankfurt and are really delicious!

Bethmännchen are small marzipan balls with three almond halves on the outside. And then off into the oven. Ok, there are a few more steps, see recipe below. But really, they are the easiest cookies I know. Butter cookies without icing might be easier. But then I find them a bit boring. And with icing they are then again just a lot of work. Especially when the kitchen is full of sugary children’s handprints afterwards.

Bethmännchen – Christmas cookie speciality made from marzipan

Ingredients

  • 50 g whole almonds
  • 2 eggs
  • 500 g marzipan compound
  • 4 Tbsp flour
  • 2 Tbsp milk
  • 1 pinch salt

Instructions

  • First you have to skin the almonds. To do this, first scald them with boiling water and let them soak for 8 minutes.
  • Then rinse the almonds with cold water, peel them and put the peeled almonds directly into a bowl of cold water. Otherwise the almonds will change color.
  • Then dry them and cut them into 2 flat halves with a knife at the tip.
  • Put them aside to dry on a clean cloth or board.
  • Now separate 1 egg into yolk and white. The yolk you put aside for later.
  • The egg white you put together with the other egg, the marzipan paste and the flour in a bowl and knead everything by hand.
  • Now you press this mass flat and put it in the fridge for about half an hour.
  • Form rolls from the cooled mass and cut them into small pieces.

  • Roll these pieces into balls little less than an inch large and press three of the almond halves on the side of each ball.
  • Place them on a baking tray lined with baking paper.
  • Now preheat the oven to 170 °C.
  • Now whisk the remaining egg yolk with the milk and a pinch of salt.
  • Brush the Bethmännchen on the baking tray with this mixture before baking.

  • Now bake them for about 20 minutes until they are lightly browned.

  • And now you try that at Christmas there are still some left!
